2 tsp organic sugar
1 tbls dry yeast
1 1/2 cups warm water
2 cups organic Spelt flour
Dissolve yeast in water according to instructions.
When ready add the water and yeast to the flour until a dough is formed, knead for 10 minutes.
Leave dough to rise in a warm place covered by a cloth.
Preheat oven to 200 degrees C.
When the dough has doubled in size knead again for 5 minutes.
Leave to rise again for approx an hour.
Knead again briefly and bake for 30 minutes.

5 Minute Spelt Bread
1 cup milk
1 cup water
1 tbls honey
1 tsps baking soda
4 cups organic spelt flour
1/4 cup caraway seeds
Mix all ingredients together in a bowl to form a batter.
Bake for 1 hour and 10 minutes in the preheated oven at 175 degrees C.
Its that simple!

Flat Spelt Bread
2 cups brown rice flour
1 1/4 cups Spelt flour
1/2 cup beer
1/8 cup flaxseed oil
3 teaspoons honey
1 cup soya milk
1 egg
Mix all ingredients together to form a stiff dough.
Leave the dough to rest for 40 minutes.
Preheat oven to 140 degrees C.
Knead the dough for 5 minutes, and split into two.
Roll out the sheets so that they are about 1/16" thick.
Bake for 35 - 40 minutes or until crispy.

3/4 cup soya milk
2 tsp lemon juice
2 cups wholemeal Spelt flour
1 tsp baking soda
Heat soya milk until just warm and add lemon juice.
Mix together flour and baking soda. Add the soya milk to form a soft dough.
Knead the dough gently for about 1 minute.
Shape the dough into a round loaf and place on a greased pan.
Bake for 25-30 minutes at 140 degrees C in a preheated oven.
